Long before sustainability became a gastronomic buzzword, Fabian Fuchs built EquiTable around fair-trade, organic and regional produce from small producers. He has led the kitchen since 2012. In an intimate, unpretentious room in district 4, it proves that ethics and refinement belong together. A thoughtful, values-driven address for genuine connoisseurs rather than a tourist landmark.
